Curcumin is a naturally occurring compound within the roots of turmeric (curcuma longa), a type of herb belonging to ginger family.

Curcumin is an orange-yellow that gives turmeric its bright yellow color. On the other hand, curcumin itself is soluble in oil, but insoluble in water, which largely limits its applications.

According to Title 21, § 73.600 Turmeric, certification of turmeric extract as color additive is exempted from certification.

Commission Regulation (EU) No 231/2012 lays down use level and specifications of curcumin E100 as food additives.

According to Codex GSFA Provisions, curcumin (INS No. 100(i)) is added to foods and beverages at concentrations up to a maximum permitted level (MPL) as adopted by the Codex Alimentarius Commission.
