Fermtek™ Erythritol

Erythritol belongs to the family of sugar alcohols also known as polyols, which are formed due to hydrolyzation processes of the aldehyde or ketone group in various carbohydrates.

Erythritol can be used in a wide range of solid and liquid formulations, including granulated powders, tablets, tablet coating, consumer-friendly lozenges, medicated chewing gum, syrups, and as mentioned before, as oral care products.

Things You Need to Know  About Ferm™ Erythritol

What Is Erythritol?

Erythritol is an organic compound, a sugar alcohol (or polyol), used as a food additive and sugar substitute. It is naturally occurring. It can be made from corn or wheat using enzymes and fermentation.

Erythritol is 60–70% as sweet as sucrose (table sugar). However, erythritol is almost completely noncaloric and does not affect blood sugar or cause tooth decay.

Why does erythritol have a cool taste?

This sense of coolness comes from the heat of dissolution and absorption. When it dissolves, it will absorb your heat, so you will feel cool. The degree of coolness of each product is expressed by the coefficient of heat of dissolution and absorption. Erythritol has the highest heat of dissolution and absorption among sugar alcohols, and its coolness is the highest.

Why Erythritol is low in calories?

Erythritol has a calorific value of about 1/10 of sucrose, which is a non-metabolic low-calorie sugar alcohol.

During metabolism, its small molecular weight enables it to be absorbed without decomposition in the small intestine and then discharged with urine, without any impact on body fat. Therefore, it can be used alone or in combination with other sweeteners to substitute sucrose for low calorie foods.

Why Erythritol has caries resistance?

The occurrence of dental caries is mainly due to the fermentation of sugar matrix in the oral cavity to produce acid under the action of bacteria, especially Streptococcus aureus.

This kind of acid can destroy the enamel of teeth through deionization, resulting in dental caries.

On the other hand, erythritol is difficult to use by bacteria that induce dental caries in the mouth and cannot be enzymatically hydrolyzed in the mouth to produce acid, which has no effect on the teeth.

It is reported that erythritol has a certain inhibitory effect on the fermentation of bacteria using sugars in the mouth.

Is erythritol suitable for diabetics?

In terms of blood glucose and insulin control, 90% of erythritol absorption is directly discharged through urine, so it does not affect the fluctuation of glucose and insulin in plasma, which makes erythritol a suitable sweetener for diabetics.

It is reported that the blood glucose index and insulin index of erythritol are 0.2 and 0.4, respectively, so erythritol has almost no effect on blood glucose.

Therefore, it can be used to develop foods suitable for patients with obesity and diabetes.
